Ingredients

Scale
  • 250 grams of all-purpose flour
  • 200 grams of granulated sugar
  • 1 teaspoon of baking powder
  • 0.5 teaspoons of baking soda
  • 1 teaspoon of ground cinnamon
  • 0.5 teaspoons of ground nutmeg
  • 0.25 teaspoons of salt
  • 2 large eggs
  • 100 milliliters of buttermilk
  • 75 milliliters of vegetable oil
  • 1 teaspoon of vanilla extract
  • Zest of one orange
  • 200 grams of dark chocolate (for ganache)
  • 100 milliliters of double cream

  • Instructions

  • Preheat your oven to 180°C (350°F).
  • Grease and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, combine the eggs, buttermilk, vegetable oil, vanilla extract, and orange zest. Whisk until well-mixed.
  • Add the wet ingredients to the dry ingredients and gently fold together just until no flour pockets remain.
  • Spoon the batter into your prepared muffin tins, filling each cup about 3/4 full. Tap gently to release any air bubbles.
  • Place the tin in the preheated oven and bake for about 20–25 minutes, or until a toothpick inserted comes out clean.
  • Let them cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
  • Chop the dark chocolate into small pieces and place in a heatproof bowl. In a saucepan, bring the double cream to a simmer, then pour over the chocolate. Let sit for a few minutes and stir until smooth.
  • Once cooled, dip the top of each mini cake into the ganache or drizzle it over with a spoon.
  • Finish with special garnishes for a festive flair.
