Ingredients

250 grams of all-purpose flour
200 grams of granulated sugar
1 teaspoon of baking powder
0.5 teaspoons of baking soda
1 teaspoon of ground cinnamon
0.5 teaspoons of ground nutmeg
0.25 teaspoons of salt
2 large eggs
100 milliliters of buttermilk
75 milliliters of vegetable oil
1 teaspoon of vanilla extract
Zest of one orange
200 grams of dark chocolate (for ganache)
100 milliliters of double cream
Instructions
Preheat your oven to 180°C (350°F).
Grease and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, combine the eggs, buttermilk, vegetable oil, vanilla extract, and orange zest. Whisk until well-mixed.
Add the wet ingredients to the dry ingredients and gently fold together just until no flour pockets remain.
Spoon the batter into your prepared muffin tins, filling each cup about 3/4 full. Tap gently to release any air bubbles.
Place the tin in the preheated oven and bake for about 20–25 minutes, or until a toothpick inserted comes out clean.
Let them cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
Chop the dark chocolate into small pieces and place in a heatproof bowl. In a saucepan, bring the double cream to a simmer, then pour over the chocolate. Let sit for a few minutes and stir until smooth.
Once cooled, dip the top of each mini cake into the ganache or drizzle it over with a spoon.
Finish with special garnishes for a festive flair.
