  • 8 oz Feta Cheese
  • 3 large Eggs
  • 1 cup Milk
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Black Pepper, to taste
  • Salt, to taste
  • 1 cup Mushrooms, sliced (optional)
  • 1/2 cup Sun-dried Tomatoes, chopped (optional)
  • Red Pepper Flakes (optional)
  • Chopped fresh Herbs (optional)

  • Instructions

  • Preheat your oven to 350°F (175°C).
  • In a pan, heat olive oil over medium heat. Add diced onion and minced garlic, cooking until the onion becomes translucent.
  • Gradually add fresh spinach, stirring until it wilts down. Remove from heat and allow to cool slightly.
  • Whisk together eggs, milk, salt, and pepper until well combined.
  • Once the spinach mixture has cooled, stir it into the egg mixture. Add crumbled feta and any optional ingredients desired.
  • Pour the mixture into a greased baking dish, spreading it out evenly.
  • Place the dish in the preheated oven and bake for 30-35 minutes until the top is golden.
