  • 200 grams of feta cheese
  • 1 cup of cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper, any color, sliced
  • 1 small red onion, thinly sliced
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • a handful of fresh herbs (parsley, mint, or basil)
  • salt and pepper to taste
