  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease and flour two 9-inch round cake pans.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat together the softened butter and granulated sugar until light and fluffy—about 3 minutes.
  • Incorporate the eggs one at a time until well blended.
  • Add the fresh lemon juice and zest, and mix until combined.
  • Gradually alternate adding the flour mixture with the milk, starting and ending with flour.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Cool cakes in pans for 10 minutes, then turn onto wire racks to cool completely.
  • Whip cream until soft peaks form and sweeten to taste.
  • Assemble by placing one cake layer on a serving plate, spreading whipped cream on it, and topping with the second layer. Add more whipped cream on top and dust with powdered sugar.
