1 cup granulated sugar
½ cup unsalted butter, softened
2 large eggs
½ cup milk
¼ cup fresh lemon juice
1 tablespoon lemon zest
2 teaspoons baking powder
¼ teaspoon salt
Powdered sugar for dusting
Whipped cream for serving
Instructions
Preheat the oven to 350°F (175°C).
Grease and flour two 9-inch round cake pans.
In a bowl, whisk together the flour, baking powder, and salt.
In a large bowl, beat together the softened butter and granulated sugar until light and fluffy—about 3 minutes.
Incorporate the eggs one at a time until well blended.
Add the fresh lemon juice and zest, and mix until combined.
Gradually alternate adding the flour mixture with the milk, starting and ending with flour.
Divide the batter evenly between the prepared cake pans.
Bake for 25-30 minutes, or until a toothpick comes out clean.
Cool cakes in pans for 10 minutes, then turn onto wire racks to cool completely.
Whip cream until soft peaks form and sweeten to taste.
Assemble by placing one cake layer on a serving plate, spreading whipped cream on it, and topping with the second layer. Add more whipped cream on top and dust with powdered sugar.
