1 pound focaccia bread
1 pound Italian sausage
1 cup fresh figs, chopped
1 large onion, diced
2 stalks celery, diced
3 cloves garlic, minced
2 cups chicken broth
1 tablespoon fresh rosemary
1 tablespoon fresh thyme
2 tablespoons olive oil
Salt and pepper to taste
½ cup dried cranberries (optional)
½ cup chopped walnuts (optional)
1 teaspoon red pepper flakes (optional)
Instructions
Preheat your oven to 350°F (175°C). Spread the diced focaccia on a baking sheet and toast in the oven for 10-15 minutes until slightly crispy.
In a large skillet, heat olive oil over medium heat. Add the diced onion and celery, cooking until softened (about 5-7 minutes).
Add the minced garlic and cook for an additional minute until fragrant. Then, add the Italian sausage, breaking it apart with a spatula. Cook until browned and cooked through (about 8-10 minutes).
Stir in the chopped figs, chicken broth, and fresh herbs. Mix well and let this simmer for 2 minutes.
In a large bowl, combine the toasted focaccia with the sausage mix. Gently fold everything together until well combined.
Transfer the stuffing to a greased baking dish, spreading it evenly. Cover with foil and bake for 20 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and crispy.
