- 2 large onions, thinly sliced
- 2 cups rice (uncooked)
- 1 can (10.5 oz) French onion soup
- 2 cups beef broth
- 2 cups shredded Swiss cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: Chopped fresh thyme or parsley

Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Sauté until they turn a deep golden brown, about 15-20 minutes.
- Add the ground beef to the pan and cook until it’s nicely browned. Drain any excess grease, if needed.
- In a large bowl, combine the cooked beef, caramelized onions, uncooked rice, French onion soup, beef broth, and a generous sprinkle of salt and pepper. Stir until everything is nicely incorporated.
- Pour the mixture into a greased 9×13 inch baking dish. Spread it evenly.
- Sprinkle the shredded Swiss cheese evenly over the top.
- Cover the dish with aluminum foil and bake for 40 minutes. Remove the foil and continue baking for an additional 15-20 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes, then serve. Garnish with fresh herbs or crispy onions if desired.
