4 boneless, skinless chicken breasts
2 large onions, thinly sliced
1 cup long-grain white rice
3 cups chicken broth
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon dried thyme
1 cup shredded Gruyère cheese
Fresh parsley (optional)
Red pepper flakes (optional)
Chardonnay or white wine (optional)
Crispy fried onions (for garnish)
Fresh thyme or rosemary (for garnish)
Instructions
In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and season with a pinch of salt. Sauté until the onions turn a deep golden brown, about 15-20 minutes.
Push the onions to the side and add the chicken breasts. Season both sides with salt, pepper, and thyme. Sear the chicken for about 5 minutes on each side until golden.
Pour in the chicken broth and bring to a simmer. Sprinkle the rice evenly over the top without stirring.
