  • 1 cup shredded Gruyère cheese
  • Fresh parsley (optional)
  • Red pepper flakes (optional)
  • Chardonnay or white wine (optional)
  • Crispy fried onions (for garnish)
  • Fresh thyme or rosemary (for garnish)

  • Instructions

  • In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and season with a pinch of salt. Sauté until the onions turn a deep golden brown, about 15-20 minutes.
  • Push the onions to the side and add the chicken breasts. Season both sides with salt, pepper, and thyme. Sear the chicken for about 5 minutes on each side until golden.
  • Pour in the chicken broth and bring to a simmer. Sprinkle the rice evenly over the top without stirring.
  • Cover the skillet with a lid and reduce heat to low. Cook for 20 minutes until the rice absorbs the liquid.
  • With the lid on, sprinkle the Gruyère cheese on top and let it melt, about 5 minutes. Turn off heat and let sit for a few minutes.
  • Garnish with fresh herbs or crispy fried onions and serve warm.
