  • 4 slices of sourdough or French bread
  • 1 large onion (yellow or sweet)
  • 2 tablespoons of unsalted butter
  • 1 cup of shredded Gruyère cheese
  • ½ cup of shredded mozzarella cheese
  • ½ teaspoon of thyme (fresh or dried)
  • Salt and pepper to taste

  • Instructions

  • In a medium skillet over medium heat, add 1 tablespoon of butter. Once melted, add the thinly sliced onion, salt, pepper, and thyme. Cook slowly, stirring frequently, for about 20-30 minutes until the onions are deep brown and caramelized. Remove from heat and set aside.
  • Take the sourdough or French bread slices and butter one side of each slice using the remaining tablespoon of butter.
  • On the unbuttered side of two slices, layer half of the Gruyère cheese, followed by a generous layer of caramelized onions, and sprinkle on the mozzarella cheese. Top with the other slices of bread, buttered side facing out.
  • In the skillet over medium heat, place the assembled sandwich. Cook for about 3-4 minutes on each side, until the bread is golden brown and the cheese is melted. If necessary, cover the skillet to help melt the cheese evenly.
  • Once done, remove from the skillet, slice in half, and serve hot.
