6 large eggs
1 cup baby potatoes, diced
1 cup fresh spinach, chopped
¾ cup goat cheese, crumbled
1 small onion, diced
2 cloves garlic, minced
Salt and pepper, to taste
2 tablespoons olive oil
Fresh herbs (optional, such as chives or parsley)
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat the olive oil over medium heat. Add diced potatoes and sauté for about 5-7 minutes until they begin to soften.
Once the potatoes are starting to get golden, toss in the onion and garlic. Stir frequently for another 3-4 minutes until the onion is translucent.
Add in the spinach and cook just until wilted.
In a bowl, whisk together eggs with a generous pinch of salt and pepper. Pour this egg mixture evenly over the potato and veggie mixture in the skillet.
Sprinkle the goat cheese over the top and let it cook untouched on the stovetop for about 2-3 minutes until the edges are set.
Transfer the skillet to the oven and bake for 15-20 minutes or until the center is just set and the top is golden.
Once done, let it cool for a few minutes, slice into wedges and serve warm, topped with fresh herbs.
