  • 1 cup baby potatoes, diced
  • 1 cup fresh spinach, chopped
  • ¾ cup goat cheese, crumbled
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh herbs (optional, such as chives or parsley)

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large oven-safe skillet, heat the olive oil over medium heat. Add diced potatoes and sauté for about 5-7 minutes until they begin to soften.
  • Once the potatoes are starting to get golden, toss in the onion and garlic. Stir frequently for another 3-4 minutes until the onion is translucent.
  • Add in the spinach and cook just until wilted.
  • In a bowl, whisk together eggs with a generous pinch of salt and pepper. Pour this egg mixture evenly over the potato and veggie mixture in the skillet.
  • Sprinkle the goat cheese over the top and let it cook untouched on the stovetop for about 2-3 minutes until the edges are set.
  • Transfer the skillet to the oven and bake for 15-20 minutes or until the center is just set and the top is golden.
  • Once done, let it cool for a few minutes, slice into wedges and serve warm, topped with fresh herbs.
