1½ pounds beef sirloin, cut into bite-sized pieces
2 lbs baby potatoes, halved
½ cup unsalted butter
4 cloves garlic, minced

Instructions
Preheat your oven to 400°F (200°C).
Wash the baby potatoes and cut them in half. Place them in a large mixing bowl.
Melt ¼ cup of butter and pour it over the potatoes. Season with salt and pepper and toss until well coated.
Transfer the potatoes to a baking sheet in a single layer and roast in the oven for 25-30 minutes or until golden brown and fork-tender.
While the potatoes are baking, prepare the beef. Cut the sirloin into bite-sized pieces and season with salt and pepper.
In a large skillet over medium-high heat, melt the remaining ¼ cup of butter. Add minced garlic and sauté for 1-2 minutes until fragrant.

Once the beef is cooked, remove it from the heat and set aside.
After the potatoes are done, combine them with the cooked beef in the skillet, tossing everything together to coat in the flavorful garlic butter.
Remove from heat, drizzle with any remaining garlic butter, and garnish with chopped fresh parsley.
