1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup granulated sugar (for frosting)
1/2 cup evaporated milk
1/2 cup unsalted butter
1 cup shredded coconut
1 cup chopped pecans
1 teaspoon vanilla extract (for frosting)
2 large egg yolks
Instructions
Preheat your oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
In a large mixing bowl, beat the eggs and sugar together until light and fluffy (about 5 minutes).
Sift together the flour, cocoa powder, baking powder, and salt in another bowl.
Gradually fold the dry ingredients into the egg mixture using a spatula, alternating with the milk, oil, and vanilla extract until just combined.
Pour the batter into the prepared pan, spreading it evenly to the edges.
Bake for 12-15 minutes or until the cake springs back when lightly touched.
Invert the cake onto a clean kitchen towel sprinkled with powdered sugar and carefully remove the parchment paper. Roll the cake with the towel starting from the short end and allow it to cool completely.
While the cake is cooling, make the frosting by combining sugar, evaporated milk, butter, and egg yolks in a saucepan. Cook over medium heat, stirring constantly until thickened (about 10-12 minutes).
Remove from heat and stir in the shredded coconut, chopped pecans, and vanilla extract. Let cool.
Once the cake has cooled completely, carefully unroll it and spread the coconut-pecan frosting evenly over the cake.
Starting from the short end, re-roll the cake carefully but tightly, placing seam side down on a serving platter.
Dust with powdered sugar and your favorite garnishes just before serving.
