1/2 cup of unsalted butter, softened
2 large eggs
3/4 cup of hot water
1/4 cup of diced crystallized ginger (optional)
1/2 cup of chopped nuts or dried fruits (optional)
Instructions
Preheat your oven to 350°F (175°C).
Grease and flour a 9×13 inch baking pan.
In a large mixing bowl, whisk together the dry ingredients: flour, baking soda, spices, and salt.
In another bowl, mix the wet ingredients: molasses, granulated sugar, butter, and eggs until smooth and creamy.
Add the wet mixture to the dry mix gradually, stirring until just combined.
Slowly pour in the hot water, mixing until everything is well incorporated.
Pour the batter into your prepared pan, spreading it evenly and bake for about 30-35 minutes, or until a toothpick inserted comes out clean.
While it cools, prepare the frosting by beating together butter, powdered sugar, molasses, and cinnamon until creamy.
Once the cake cools completely, frost generously with the cinnamon molasses frosting.
