1 ½ cups ginger snap cookies (crushed)
½ cup unsalted butter (melted)
2 tablespoons brown sugar
16 oz cream cheese (softened)
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon nutmeg
¼ cup sour cream
Instructions
Preheat your oven to 325°F (160°C).
In a medium bowl, mix the crushed ginger snap cookies, melted butter, and brown sugar until resembling wet sand. Press evenly into a greased 9×9 inch pan.
Bake the crust for about 10 minutes until golden.
In a large bowl, beat the softened cream cheese until smooth, then add sugar and mix well.
Add eggs one at a time, mixing well after each. Stir in vanilla, ginger, cinnamon, nutmeg, and sour cream until smooth.
Pour filling over the cooled crust and spread evenly.
Bake for 30-35 minutes, until edges are set but center jiggles slightly.
Cool at room temperature for 1 hour, then refrigerate for at least 4 hours.
