  • ¾ cup buttermilk
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • Grease your muffin tin with butter or line it with paper liners.
  • In a large mixing bowl, whisk together the flour, brown sugar, baking soda, ginger, cinnamon, nutmeg, and salt.
  • In a separate bowl, beat the egg, then add the buttermilk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently fold them together.
  • Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake for about 18-20 minutes, until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
