Ingredients

1 cup all-purpose flour
2 tablespoons brown sugar
1 tablespoon baking powder
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup milk
1 egg
2 tablespoons melted butter
1 tablespoon molasses
Optional: Chopped pecans or walnuts, Dried cranberries or raisins, Chocolate chips
Garnishes: Whipped cream, Maple syrup, Fresh fruit, Ground cinnamon or powdered sugar
Instructions
In a large bowl, whisk together the flour, brown sugar, baking powder, ground ginger, ground cinnamon, nutmeg, and salt until well combined.
In another bowl, combine the milk, egg, melted butter, and molasses. Whisk until smooth.
Pour the wet ingredients into the dry mixture. Stir just until combined, being careful not to overmix.
Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side.
Place finished pancakes on a plate in a warm oven while you cook the remaining batter.
Stack the pancakes and serve hot with your favorite garnishes and syrup.
