Ingredients

  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 tablespoon molasses
  • Optional: Chopped pecans or walnuts, Dried cranberries or raisins, Chocolate chips
  • Garnishes: Whipped cream, Maple syrup, Fresh fruit, Ground cinnamon or powdered sugar

  • Instructions

  • In a large bowl, whisk together the flour, brown sugar, baking powder, ground ginger, ground cinnamon, nutmeg, and salt until well combined.
  • In another bowl, combine the milk, egg, melted butter, and molasses. Whisk until smooth.
  • Pour the wet ingredients into the dry mixture. Stir just until combined, being careful not to overmix.
  • Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  • Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook until golden brown on the other side.
  • Place finished pancakes on a plate in a warm oven while you cook the remaining batter.
  • Stack the pancakes and serve hot with your favorite garnishes and syrup.
