1 cup unsalted butter (softened)
½ cup granulated sugar
1 cup packed brown sugar
2 cups all-purpose flour
1 tsp baking soda
2 tsp ground ginger
1 tsp ground cinnamon
½ tsp nutmeg
¼ tsp salt
½ cup chopped nuts (optional)
Powdered sugar (for rolling)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
Whisk together the flour, baking soda, ginger, cinnamon, nutmeg, and salt in another bowl. Gradually add this mixture to your butter-sugar base, stirring until just combined.
Gently fold in the chopped nuts if using.
Shape the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper.
Bake for about 10-12 minutes or until golden on the edges.
Let them cool on the baking sheet for a few minutes, then roll in powdered sugar.
Transfer to a cooling rack and optionally sprinkle more powdered sugar on top.
