  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Red pepper flakes, optional
  • Sun-dried tomatoes, optional
  • Walnuts or pecans, optional
  • Balsamic glaze, for garnish
  • Fresh herb sprigs, for garnish

  • Instructions

  • Preheat your oven to 375°F (190°C).
  • Slice the mini bell peppers in half lengthwise and remove the seeds.
  • In a medium mixing bowl, combine goat cheese, minced garlic, chopped herbs, olive oil, salt, and pepper. Mix until creamy.
  • Take about a tablespoon of the filling and gently press it into each halved pepper.
  • Place the stuffed peppers on a baking sheet lined with parchment paper. Drizzle a little olive oil on top. Bake for about 15-20 minutes until tender.
