Wash the spinach thoroughly and remove any dirt or sand. Bring a pot of water to a boil and blanch the spinach for about 30 seconds.Immediately transfer the spinach to an ice bath to maintain its vibrant color for a couple of minutes.In a mixing bowl, combine the toasted sesame seeds, soy sauce, sugar, mirin, and sesame oil. Mix well until the sugar dissolves.Drain and gently squeeze out the excess water from the spinach.In a large bowl, add the spinach and drizzle the sesame sauce over it.
