Ingredients

Scale
  • 8 ounces of fresh Spinach
  • 3 tablespoons of Sesame Seeds
  • 2 tablespoons of Soy Sauce
  • 1 tablespoon of Sugar
  • 1 tablespoon of Mirin
  • 2 teaspoons of Sesame Oil
  • Optional Additions: Spinach stems, napa cabbage, or kale
  • Special Garnishes: Chopped green onions, red pepper flakes

  • Instructions

  • Wash the spinach thoroughly and remove any dirt or sand. Bring a pot of water to a boil and blanch the spinach for about 30 seconds.
  • Immediately transfer the spinach to an ice bath to maintain its vibrant color for a couple of minutes.
  • In a mixing bowl, combine the toasted sesame seeds, soy sauce, sugar, mirin, and sesame oil. Mix well until the sugar dissolves.
  • Drain and gently squeeze out the excess water from the spinach.
  • In a large bowl, add the spinach and drizzle the sesame sauce over it. Toss gently to coat.
  • Transfer the Gomae to a serving dish and sprinkle with optional garnishes. Enjoy it chilled or at room temperature.
