- 500g Chicken Breast
- 200g Plain Yogurt
- 4 cloves Garlic, minced
- 1-inch piece Ginger, grated
- 2 tsp Garam Masala
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- 400g Tomato Purée
- 200ml Coconut Milk
- 2 tbsp Vegetable Oil
- Salt to taste
- Cilantro for garnish
- Optional: Green Chilies, Cream, Peas
Instructions
- Marinate the Chicken: In a large bowl, combine the plain yogurt, garlic, ginger, garam masala, ground cumin, ground coriander, and a pinch of salt. Add the chicken breast pieces and mix well to coat. Cover and refrigerate for at least an hour, preferably overnight for maximum flavor.
- Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, shaking off any excess. Add the chicken to the skillet and cook until browned on all sides, about 5-7 minutes. The chicken doesn’t need to be fully cooked at this stage as it will finish cooking in the sauce. Remove the chicken and set aside.
- Prepare the Sauce: In the same skillet, add the tomato purée and cook for 2-3 minutes, allowing it to reduce slightly. Then, pour in the coconut milk and stir to combine. Bring the mixture to a simmer.
- Combine Chicken and Sauce: Return the browned chicken to the skillet, stirring well to coat the pieces in the sauce. Cover and simmer for about 15-20 minutes, or until the chicken is cooked through and tender. Taste and adjust seasoning as necessary.
- Garnish and Serve: Once the chicken is cooked, remove from heat. Garnish with fresh cilantro and serve with warm naan or cooked basmati rice, alongside lemon wedges for an extra zing.
