2 pounds Chicken breast
1/4 cup Olive oil
1/4 cup Lemon juice (freshly squeezed)
4 cloves Garlic (minced)
2 teaspoons Oregano
Salt and pepper (to taste)
4 pieces Pita bread
Red pepper flakes (optional)
Bell peppers or onions (optional)
Olives or feta cheese (optional)
Fresh parsley or cilantro (for garnish)
Lemon wedges (for garnish)
Pickled vegetables (for garnish)
Instructions
In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Add the chicken breasts and ensure they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper in a mixing bowl. Mix until smooth and refrigerate.
Preheat your grill to medium-high heat.
Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes on each side or until it reaches an internal temperature of 165°F.
Let the chicken rest for 5 minutes before slicing it into strips.
Layer the grilled chicken in pita bread and top with tzatziki and garnishes.
