3–4 cloves Roasted Garlic
2 tablespoons Olive Oil
1 cup Ricotta Cheese
½ cup crumbled Feta Cheese
¼ cup grated Parmesan Cheese
1 teaspoon Italian Herbs
Salt and Pepper to taste
Optional: Red Pepper Flakes, Sun-Dried Tomatoes, Mushrooms

Instructions
Prepare the Roasted Garlic: Preheat your oven to 400°F (200°C). Cut the top off a full head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for about 35-40 minutes until soft and caramelized.
Sauté the Spinach: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and pepper, then set aside.
Make the White Sauce: In a bowl, combine ricotta, crumbled feta, grated Parmesan, and squeezed roasted garlic. Mash together until blended, then season with Italian herbs, salt, and pepper.
Preheat the Oven: Increase to 475°F (245°C) for a crispy crust.
