  • 4 cups of vegetable broth
  • 1 cup of cooked beets, diced
  • Salt and pepper to taste

  • Dill for garnish
  • Chopped celery (optional)
  • Chopped carrots (optional)
  • Hard-boiled eggs (optional)
  • Spinach or kale (optional)

  • Instructions

  • In a large pot over medium heat, warm the olive oil. Once shimmering, add the chopped onion and sauté until translucent, about 3-5 minutes.
  • Stir in the diced potatoes and cook for another 2-3 minutes.

  • Add the chopped sorrel and diced beets and simmer for another 5–7 minutes.
  • Taste and add salt and pepper as needed.
