1 tablespoon of olive oil
1 medium onion, chopped
2 medium potatoes, diced
2 cups of fresh sorrel, chopped
4 cups of vegetable broth
1 cup of cooked beets, diced
Salt and pepper to taste
Sour cream (optional)
Dill for garnish
Chopped celery (optional)
Chopped carrots (optional)
Hard-boiled eggs (optional)
Spinach or kale (optional)
Instructions
In a large pot over medium heat, warm the olive oil. Once shimmering, add the chopped onion and sauté until translucent, about 3-5 minutes.
Stir in the diced potatoes and cook for another 2-3 minutes.
Pour in the vegetable broth and bring it to a gentle boil. Reduce heat and let it simmer until the potatoes are tender, around 10-15 minutes.
Add the chopped sorrel and diced beets and simmer for another 5–7 minutes.
Taste and add salt and pepper as needed.
Serve in bowls, add a dollop of sour cream and sprinkle with dill.
