4 boneless, skinless chicken breasts
2 tablespoons olive oil
Salt and pepper to taste
1 cup fresh parsley, chopped
1/2 cup fresh cilantro, chopped
4 cloves garlic, minced
1 teaspoon red pepper flakes (adjust to taste)
1/4 cup red wine vinegar
1/2 cup olive oil (for chimichurri)
Instructions
Prepare the chimichurri sauce by mixing chopped parsley, cilantro, minced garlic, red pepper flakes, and red wine vinegar in a bowl. Whisk in 1/2 cup of olive oil and season with salt and pepper.
Drizzle olive oil over chicken breasts, seasoning both sides with salt and pepper. Let sit for about 10 minutes.
Preheat the grill to medium-high heat.
Place chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
Remove from grill and let the chicken rest for about 5 minutes.
Slice the chicken and drizzle with chimichurri sauce. Serve with extra sauce on the side for dipping.
