Ingredients

  • 4 large portobello mushrooms
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 burger buns (whole grain or your favorite type)
  • 2 cups spinach or arugula
  • 1 ripe avocado, sliced
  • 1 large tomato, sliced
  • Cheese slices (optional)
  • Condiments of your choice (ketchup, mustard, or aioli)

  • Instructions

  • Make a marinade by mixing olive oil, balsamic vinegar, garlic powder, onion powder, salt, and pepper in a bowl.
  • Remove the stems from the portobello mushrooms, place them gill-side up, and pour the marinade over the mushrooms. Let marinate for at least 15 minutes.
  • Preheat your grill to medium-high heat.
  • Grill the mushrooms gill-side down for 5-7 minutes, then flip and grill for another 5-7 minutes. If using cheese, add it on top during the last couple of minutes.
  • Toast the burger buns on the grill for 1-2 minutes.
  • Assemble the burgers by placing grilled portobello on the bottom half of each bun, topping with spinach, avocado, tomato, and condiments.
