4 large portobello mushrooms
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
4 burger buns (whole grain or your favorite type)
2 cups spinach or arugula
1 ripe avocado, sliced
1 large tomato, sliced
Cheese slices (optional)
Condiments of your choice (ketchup, mustard, or aioli)
Instructions
Make a marinade by mixing olive oil, balsamic vinegar, garlic powder, onion powder, salt, and pepper in a bowl.
Remove the stems from the portobello mushrooms, place them gill-side up, and pour the marinade over the mushrooms. Let marinate for at least 15 minutes.
Preheat your grill to medium-high heat.
Grill the mushrooms gill-side down for 5-7 minutes, then flip and grill for another 5-7 minutes. If using cheese, add it on top during the last couple of minutes.
Toast the burger buns on the grill for 1-2 minutes.
Assemble the burgers by placing grilled portobello on the bottom half of each bun, topping with spinach, avocado, tomato, and condiments.
