  • 1 ripe avocado
  • 1 tomato, diced

  • 1/4 cup red onion, diced
  • Salt and pepper to taste
  • Optional: jalapeños, chili powder, black beans, corn

  • Instructions

  • Prepare the Marinade: In a bowl, combine lime juice, minced garlic, olive oil, salt, and pepper. Mix well.
  • Marinate the Shrimp: Add the shrimp to the bowl, ensuring each piece is coated with the marinade. Cover and let it marinate for at least 15 minutes.
  • Make Guacamole: In a separate bowl, mash the ripe avocado with a fork. Mix in lime juice, salt, and adjust flavor to taste.
  • Prepare Pico de Gallo: Combine diced tomatoes, chopped cilantro, diced red onion, lime juice, and salt. Stir well and set aside.
