2 lbs boneless, skinless chicken thighs
1 cup coconut milk
2 tablespoons soy sauce
2 tablespoons fish sauce
2 tablespoons brown sugar
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
Juice of 1 lime
1 teaspoon ground coriander
Wooden skewers (or metal skewers)
Instructions
In a large bowl, whisk together coconut milk, soy sauce, fish sauce, brown sugar, garlic, ginger, lime juice, and ground coriander. This mixture will serve as your marinade.
Cut the chicken thighs into bite-sized pieces and add them to the marinade. Ensure that all the pieces are well-coated.
Cover the bowl and marinate the chicken in the refrigerator for at least 1 hour, or preferably overnight, to let the flavors meld together.
Preheat your grill to medium-high heat. If you’re using wooden skewers, make sure they have been soaked in water to prevent burning.
Thread the marinated chicken onto the skewers, leaving a small space between each piece for even cooking.
