  • 2 lbs boneless, skinless chicken thighs
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Juice of 1 lime
  • 1 teaspoon ground coriander
  • Wooden skewers (or metal skewers)

  • Instructions

  • In a large bowl, whisk together coconut milk, soy sauce, fish sauce, brown sugar, garlic, ginger, lime juice, and ground coriander. This mixture will serve as your marinade.
  • Cut the chicken thighs into bite-sized pieces and add them to the marinade. Ensure that all the pieces are well-coated.
  • Cover the bowl and marinate the chicken in the refrigerator for at least 1 hour, or preferably overnight, to let the flavors meld together.
  • Preheat your grill to medium-high heat. If you’re using wooden skewers, make sure they have been soaked in water to prevent burning.
  • Thread the marinated chicken onto the skewers, leaving a small space between each piece for even cooking.
  • Place the skewers on the grill and cook for about 5-7 minutes on each side or until the chicken is cooked through and has nicely charred marks.
