2 zucchinis, sliced into thick rounds
1 red bell pepper, cut into quarters
1 yellow bell pepper, cut into quarters
1 red onion, sliced into thick rings
8 ounces of mushrooms, cleaned and stems removed
1 cup of cherry tomatoes
1 eggplant, sliced into rounds
4 tablespoons of olive oil
2 teaspoons of Italian seasoning or your favorite herb blend
Salt and pepper to taste
1 tablespoon of balsamic vinegar (optional)
Fresh herbs like basil or parsley for garnish
Instructions
Rinse all your vegetables under cool water and pat them dry with a paper towel. Slice the zucchini, eggplant, and onion, and cut the bell peppers into quarters.
In a large bowl, combine the olive oil, Italian seasoning, salt, and pepper. Add the prepared vegetables and toss until evenly coated. Allow the vegetables to marinate for about 15-20 minutes.
Preheat your grill to medium-high heat.
Place the zucchini, bell peppers, onion, and eggplant onto the grill for about 5-7 minutes on each side. Add the mushrooms and cherry tomatoes later for 2-3 minutes each side.
Remove the vegetables and arrange them on a large serving plate. Sprinkle fresh herbs on top, and serve.
