  • 2 large sweet potatoes
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1 can black beans (optional)
  • Fresh spinach or kale (optional)
  • Chili powder or red pepper flakes (optional)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel and dice sweet potatoes into cubes and boil in salted water until fork-tender, about 10-15 minutes. Drain and set aside.
  • In a large skillet, heat a tablespoon of olive oil over medium heat, add diced onion and cook until translucent, about 4 minutes. Stir in garlic and bell pepper, cooking for an additional 2-3 minutes.
  • Add ground turkey to the skillet, breaking it apart with a spatula. Stir in cumin, paprika, salt, and pepper. Cook until browned and cooked through, about 7-10 minutes.
  • In a large bowl, fold the cooked sweet potatoes into the turkey and vegetable mixture.
  • Pour the mixture into a greased 9×13 inch baking dish. If using cheese, sprinkle it on top.
  • Bake for 20-25 minutes until heated through and cheese is melted and bubbly.
