- 2 large sweet potatoes
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 can black beans (optional)
- Fresh spinach or kale (optional)
- Chili powder or red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and dice sweet potatoes into cubes and boil in salted water until fork-tender, about 10-15 minutes. Drain and set aside.
- In a large skillet, heat a tablespoon of olive oil over medium heat, add diced onion and cook until translucent, about 4 minutes. Stir in garlic and bell pepper, cooking for an additional 2-3 minutes.
- Add ground turkey to the skillet, breaking it apart with a spatula. Stir in cumin, paprika, salt, and pepper. Cook until browned and cooked through, about 7-10 minutes.
- In a large bowl, fold the cooked sweet potatoes into the turkey and vegetable mixture.
- Pour the mixture into a greased 9×13 inch baking dish. If using cheese, sprinkle it on top.
- Bake for 20-25 minutes until heated through and cheese is melted and bubbly.
- Remove from oven, let cool slightly, and garnish with toppings before serving.
