4 large bell peppers
1 pound of ground turkey
1 small onion, diced
2 cloves of garlic, minced
1 tablespoon of taco seasoning
1 cup of diced tomatoes
1 cup of black beans, optional
1 cup of shredded cheese, optional
Fresh cilantro for garnish, optional
Instructions
Preheat your oven to 375°F (190°C).
Prepare the peppers by slicing the tops off and removing the seeds and membranes, lightly salt the insides.
In a large skillet over medium heat, sauté the diced onions and minced garlic in olive oil until soft and fragrant, about 3–4 minutes.
Stir in the ground turkey and cook until browned, about 5–7 minutes, draining any excess fat if necessary.
Add the taco seasoning, diced tomatoes, and black beans (if using) to the turkey, mix well, and simmer for another 5 minutes.
Stuff the bell peppers tightly with the turkey mixture.
Arrange the stuffed peppers upright in a baking dish and sprinkle cheese on top if desired.
Cover with foil and bake for about 20 minutes, then remove the foil and bake for another 10–15 minutes until the peppers are tender and the cheese is bubbly.
Garnish with fresh cilantro and serve hot.
