  • 1 can or bottle Guinness beer
  • 3 medium Carrots, sliced
  • 2 large Potatoes, diced
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 teaspoons Fresh thyme (or 1 teaspoon dried)
  • 2 Bay leaves
  • 2 tablespoons Olive oil
  • Salt and pepper

  • Instructions

  • Brown the beef: Heat olive oil in a large Dutch oven over medium-high heat. Season the beef with salt and pepper. In batches, brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
  • Sauté the vegetables: In the same pot, add onions and garlic. Sauté until softened, about 4 minutes. Add carrots and potatoes, cooking for another 3 minutes.
  • Add the liquid: Pour in the Guinness beer, scraping the bottom of the pot to release any browned bits. Add the beef broth, thyme, and bay leaves.
  • Combine everything: Return the browned beef to the pot, stirring to combine all ingredients. Bring the mixture to a boil.
  • Simmer: Reduce the heat to low, cover the pot, and let it simmer for 2-3 hours until the beef is fork-tender. Stir occasionally, and add more broth if needed.
  • Adjust seasoning: Before serving, taste the stew and adjust the seasoning with more salt and pepper, if necessary.
  • Serve: Ladle the stew into bowls and garnish with fresh parsley. Serve with crusty bread on the side for dipping.
