1 pound ground beef
1 medium onion, chopped
2–3 cloves garlic, minced
4 cups chicken broth
4 medium potatoes, peeled and diced
2 carrots, chopped
2–3 stalks celery, chopped
1 cup milk
Salt and pepper, to taste
Optional garnishes: chopped green onions, shredded cheese, crispy bacon bits
Instructions
In a large pot or Dutch oven over medium heat, add the ground beef. Cook until browned, breaking it up with a spoon as it cooks. Once browned, drain excess fat if necessary.
Add the chopped onion, garlic, carrots, and celery to the pot. Sauté for about 5 minutes, or until the vegetables are slightly softened.
Pour in the chicken broth and bring the mixture to a gentle boil. Add the diced potatoes and stir well. Let the pot simmer gently for about 15 minutes, or until the potatoes are tender.
Once the potatoes are cooked, reduce the heat to low and stir in the milk. Allow the soup to heat through, but do not let it boil after adding the milk.
Season the soup with salt and pepper according to your preference. Optionally, add any additional herbs or spices.
Serve hot in bowls, and top with your choice of garnishes.
