  • 1 teaspoon Garlic Powder

  • Instructions

  • Prep the Hatch Chiles: Roast fresh Hatch chiles until blistered, peel, seed, and chop. For canned chiles, drain and chop.
  • Make the Filling: Combine the chiles, 1 cup of shredded cheese, cumin, garlic powder, salt, and pepper in a bowl.
  • Prepare the Tortillas: Lightly toast the corn tortillas in a skillet until pliable.
  • Assemble the Enchiladas: Spread green enchilada sauce in a baking dish, fill tortillas with the mixture, roll, and place in the dish seam-side down.
  • Add the Sauce: Pour remaining green enchilada sauce on top and sprinkle with remaining cheese.
