- 1 ripe banana
- 1 medium zucchini (grated)
- 1/2 cup of almond butter
- 1/4 cup of honey or maple syrup

- 1/2 teaspoon of cinnamon
- Pinch of salt
- Optional: 1/4 to 1/2 cup of dark chocolate chips

- Optional: Shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Wash and grate the zucchini. Squeeze out excess moisture.
- In a large bowl, mash the ripe banana. Add grated zucchini, almond butter, honey or maple syrup, and vanilla extract. Stir well.
- In a separate bowl, mix rolled oats, baking soda, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in any optional ingredients if desired.
- Drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until edges are golden brown.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
