  • 1 medium zucchini (grated)

  • 1/2 teaspoon of cinnamon
  • Pinch of salt
  • Optional: 1/4 to 1/2 cup of dark chocolate chips

  • Optional: Seeds (chia or flax seeds)
  • Optional: Shredded coconut

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Wash and grate the zucchini. Squeeze out excess moisture.
  • In a large bowl, mash the ripe banana. Add grated zucchini, almond butter, honey or maple syrup, and vanilla extract. Stir well.
  • In a separate bowl, mix rolled oats, baking soda, cinnamon, and salt.
  • Gradually add dry ingredients to wet mixture, stirring until just combined. Fold in any optional ingredients if desired.
  • Drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 12-15 minutes or until edges are golden brown.
  • Cool on the baking sheet for 5 minutes before transferring to a wire rack.
