Ingredients
Scale
8 lamb chops (lamb rib or lamb loin)
1/4 cup fresh parsley, chopped
1/4 cup fresh rosemary, chopped
2 cloves garlic, minced
1/4 cup breadcrumbs
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
2 tablespoons olive oil
1 tablespoon Dijon mustard
Instructions
Start by patting the lamb chops dry with paper towels and seasoning both sides generously with salt and pepper.
In a bowl, combine the parsley, rosemary, garlic, breadcrumbs, Parmesan, olive oil, and Dijon mustard. Mix until somewhat pasty but still crumbly.
Generously coat the top of each lamb chop with the herb mixture, pressing down lightly to ensure it adheres well.
Preheat your oven to 400°F (200°C). Heat a large, oven-safe skillet over medium-high heat, drizzle with olive oil, and place the lamb chops crust-side down. Sear for about 3-4 minutes until golden brown.
Carefully flip the chops over and transfer the skillet to the preheated oven. Bake for an additional 8-10 minutes for medium-rare.
Once cooked to your liking, remove the skillet from the oven and let the chops rest for about 5 minutes.
Plate the lamb chops with your choice of sides, garnish with lemon wedges and fresh herbs.
