  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard

  • Instructions

  • Start by patting the lamb chops dry with paper towels and seasoning both sides generously with salt and pepper.
  • In a bowl, combine the parsley, rosemary, garlic, breadcrumbs, Parmesan, olive oil, and Dijon mustard. Mix until somewhat pasty but still crumbly.
  • Generously coat the top of each lamb chop with the herb mixture, pressing down lightly to ensure it adheres well.
  • Preheat your oven to 400°F (200°C). Heat a large, oven-safe skillet over medium-high heat, drizzle with olive oil, and place the lamb chops crust-side down. Sear for about 3-4 minutes until golden brown.
  • Carefully flip the chops over and transfer the skillet to the preheated oven. Bake for an additional 8-10 minutes for medium-rare.
  • Once cooked to your liking, remove the skillet from the oven and let the chops rest for about 5 minutes.
