8 oz of rotini pasta
1 lb of boneless, skinless chicken breasts
1 cup of cherry tomatoes, halved
1 cup of cucumber, diced
1/4 cup red onion, thinly sliced
1/2 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1 lemon, zested and juiced
1/4 cup olive oil
Salt and pepper, to taste
Instructions
Bring a large pot of salted water to a boil. Add the rotini and cook according to the package instructions until al dente. Once done, drain it and give it a quick rinse under cold water.
In a large skillet, heat a tablespoon of olive oil over medium heat. Season the chicken breasts with salt and pepper and cook until golden brown on both sides, about 6-7 minutes per side. Let them rest for a few minutes before slicing them into bite-sized pieces.
While the pasta and chicken are cooking, dice the cucumber and halve the cherry tomatoes. Slice the red onion thinly, and chop the fresh herbs.
In a small bowl, whisk together the lemon juice, lemon zest, remaining olive oil, and a pinch of salt and pepper. Taste and adjust according to preference.
In a large mixing bowl, toss together the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, parsley, and basil. Pour the dressing over and mix thoroughly.
Transfer the salad to a serving dish or individual plates. If desired, top it off with some grated Parmesan cheese and extra herbs.
