  • 1/2 cup grated Parmesan Cheese
  • Red Pepper Flakes (optional)
  • 1/2 cup Sun-Dried Tomatoes (optional)
  • Handful of Nuts (optional)
  • Fresh Basil Leaves (for garnish)
  • Cherry Tomatoes (for garnish)
  • Balsamic Reduction (for garnish)

  • Instructions

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them upright in a baking dish.
  • Make the Filling: In a bowl, combine the ricotta cheese, minced garlic, chopped fresh herbs, half of the grated Parmesan, salt, and pepper. Mix until well blended and creamy.
  • Stuff the Peppers: Generously fill each pepper with the ricotta mixture, pressing down gently to pack them.
  • Add Toppings: Sprinkle the remaining Parmesan cheese over the stuffed peppers.
  • Bake: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the tops are golden brown.
  • Serve: Remove from the oven, let cool slightly, and garnish with fresh basil and other toppings.
