4 cups Fresh Broccoli, chopped
1 cup Cheddar Cheese, shredded
4 cups Chicken or Vegetable Broth
1 cup Milk
1 cup Protein Source (cooked chicken, beans, or tofu)
1 medium Onion, diced
3 cloves Garlic, minced
2 tablespoons Olive Oil
Salt and Pepper, to taste
Instructions
Begin by heating the olive oil in a large pot over medium heat. Add the diced onion and sauté until it becomes translucent, about 3-4 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Add the chopped broccoli and pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat to simmer. Cover the pot and cook until the broccoli is tender, about 10 minutes.
Once the broccoli is tender, add the milk and your preferred protein source. Stir thoroughly to combine.
Using an immersion blender, puree the soup until it reaches your desired consistency. For a creamier texture, blend longer; for a chunkier soup, blend for a shorter time.
Stir in the shredded cheddar cheese, cooking over low heat until melted and well incorporated. Add salt and pepper to taste.
