1 tablespoon sugar
1 cup unsalted butter, chilled and cubed
6 to 8 tablespoons ice water
6 to 8 medium-sized apples (a mix of Granny Smith and Honeycrisp is ideal)
¾ cup sugar (adjust based on apple sweetness)
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon nutmeg (optional)
1 tablespoon lemon juice
2 tablespoons butter, diced
1 egg, beaten (for egg wash)
Extra sugar for sprinkling on top
Instructions
Mix flour, salt, and sugar in a large bowl. Add cubed butter and work it into the mixture until it resembles coarse crumbs.
Gradually add ice water until combined, form into two disks, wrap, and refrigerate for at least 1 hour.
Peel, core, and slice the apples. In a bowl, combine apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
Roll out one disk of dough into a circle and place it into a 9-inch pie pan.
Pour the apple mixture into the pie crust and dot with pieces of butter. Roll out the second disk and cover the filling.
Brush the top crust with beaten egg and sprinkle with sugar. Bake at 425°F for 15 minutes, then reduce to 350°F and bake for an additional 30-40 minutes.
