  • Prepare the Egg Yolks: In a separate bowl, whisk together the egg yolks until they become slightly lighter in color.
  • Temper the Eggs: Gradually add about half a cup of the warm cream mixture to the egg yolks, whisking constantly. Once combined, pour the mixture back into the saucepan with the remaining cream.
  • Cook the Mixture: Return the saucepan to medium-low heat and cook the mixture, stirring constantly, until it thickens enough to coat the back of a spoon. This usually takes around 5-10 minutes.
  • Strain the Mixture: Once thickened, strain the mixture through a fine-mesh sieve into a clean bowl to remove the lavender buds. Add the vanilla extract and stir to combine.
  • Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the base for at least 4 hours, or preferably overnight.
