1 cup whole milk
3/4 cup honey
2 tablespoons dried culinary lavender
1 teaspoon vanilla extract
Pinch of salt
2 large egg yolks
Instructions
Infuse the Cream: In a medium saucepan, combine the heavy cream, whole milk, dried lavender, honey, and a pinch of salt. Heat the mixture over medium heat until it just begins to simmer, stirring occasionally to help dissolve the honey. Remove from heat and let it steep for about 15-20 minutes.
Prepare the Egg Yolks: In a separate bowl, whisk together the egg yolks until they become slightly lighter in color.
Temper the Eggs: Gradually add about half a cup of the warm cream mixture to the egg yolks, whisking constantly. Once combined, pour the mixture back into the saucepan with the remaining cream.
Cook the Mixture: Return the saucepan to medium-low heat and cook the mixture, stirring constantly, until it thickens enough to coat the back of a spoon. This usually takes around 5-10 minutes.
Strain the Mixture: Once thickened, strain the mixture through a fine-mesh sieve into a clean bowl to remove the lavender buds. Add the vanilla extract and stir to combine.
Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the base for at least 4 hours, or preferably overnight.
Churn the Ice Cream: Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
