Instructions
- Preheat the Oven: Begin by preheating your oven to 400°F (200°C).
- Prepare the Squash: Cut the butternut squash in half lengthwise, scoop out the seeds, and place cut side up on a baking sheet. Drizzle with olive oil, sprinkle with salt, pepper, and cinnamon.
- Roast the Squash: Roast in the preheated oven for about 30-40 minutes until tender and golden brown.
- Cook the Chicken Filling: Heat a skillet over medium heat, add diced onions and cook until soft. Stir in the shredded chicken, honey, and remaining cinnamon, cooking for 2-3 minutes.
- Mix in Cheese: Off the heat, mix in half of the shredded cheese into the filling.
- Stuff the Squash: Remove the squash from the oven and spoon the chicken and cheese filling into the halves.
- Bake Again: Return the stuffed squash to the oven, sprinkle remaining cheese on top, and bake for another 10-15 minutes until the cheese is melted.
- Garnish and Serve: Drizzle with extra honey if desired, sprinkle with fresh herbs, and serve hot.
