- Preheat your oven to 350°F (180°C). In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy. This should take about 2-3 minutes using an electric mixer.
- Next, add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract. The mixture should be smooth and fluffy.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet ingredients, mixing until well combined. Then fold in the chocolate chips (or your chosen mix-ins).
- Use a tablespoon to drop cookie dough onto a baking sheet lined with parchment paper, giving them about 2 inches of space between each dollop. Bake for 10-12 minutes or until the edges are light golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once your cookies are cooled, take a scoop of your favorite ice cream and place it between two cookies. Press gently, but not too hard.
- For the best result, place your assembled sandwiches into the freezer for at least 30 minutes.
