Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste
  • 8 corn tortillas
  • 1 cup red cabbage, shredded
  • 1 avocado, sliced
  • 1/2 cup Greek yogurt or dairy-free yogurt

  • Instructions

  • Preheat the oven to 425°F (220°C).
  • Peel and dice the sweet potatoes into small cubes.
  • In a large bowl, toss the sweet potato cubes with olive oil, cumin, coriander, cayenne (if using), salt, and pepper until well-coated.
  • Spread the seasoned cubes evenly on a baking sheet lined with parchment paper. Roast them in the oven for 25-30 minutes, flipping halfway through.
  • While those potatoes are roasting, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side.
  • Once the sweet potatoes are roasted, layer on the sweet potatoes, shredded cabbage, and avocado slices in a warm tortilla.
  • Drizzle yogurt over the top, add any garnishes, and serve.
