4 cups fresh rhubarb, chopped (or frozen, thawed, and drained)
1 cup granulated sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 cup all-purpose flour
1 cup old-fashioned oats
1 cup brown sugar, packed
½ cup unsalted butter, melted
½ teaspoon cinnamon
¼ teaspoon salt
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the chopped rhubarb, sugar, cornstarch, vanilla extract, and lemon juice. Toss everything together until the rhubarb is well coated. Next, pour this mixture into a greased 9×13-inch baking dish.
