Ingredients

  • 1 cup Green or Brown Lentils
  • 2 tablespoons Olive Oil
  • 1 medium Onion, chopped
  • 2 medium Carrots, diced
  • 2 stalks Celery, chopped
  • 3 cloves Garlic, minced
  • 6 cups Vegetable or Chicken Broth
  • 1 can (14.5 ounces) Diced Tomatoes
  • 1 cup Pasta (small variety like ditalini or orzo)
  • 1 teaspoon Dried Oregano
  • 1 Bay Leaf
  • Salt and Pepper to taste

  • Instructions

  • Rinse the lentils under cold water and set aside. Chop the onion, carrots, celery, and mince the garlic.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened.
  • Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
  • Add the rinsed lentils, diced tomatoes, broth, dried oregano, bay leaf, salt, and pepper to the pot. Stir well to combine.
  • Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the lentils are tender.
  • Stir in the pasta and cook for an additional 10-12 minutes, or until the pasta is al dente. If the soup becomes too thick, feel free to add more broth or water.
  • Taste the soup and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
  • Ladle the soup into bowls and garnish with fresh basil and a sprinkle of lemon zest, if desired.
