1 cup Green or Brown Lentils
2 tablespoons Olive Oil
1 medium Onion, chopped
2 medium Carrots, diced
2 stalks Celery, chopped
3 cloves Garlic, minced
6 cups Vegetable or Chicken Broth
1 can (14.5 ounces) Diced Tomatoes
1 cup Pasta (small variety like ditalini or orzo)
1 teaspoon Dried Oregano
1 Bay Leaf
Salt and Pepper to taste
Instructions
Rinse the lentils under cold water and set aside. Chop the onion, carrots, celery, and mince the garlic.
In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables are softened.
Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
Add the rinsed lentils, diced tomatoes, broth, dried oregano, bay leaf, salt, and pepper to the pot. Stir well to combine.
Bring the soup to a boil, then reduce the heat to low and let it simmer for about 30 minutes, or until the lentils are tender.
Stir in the pasta and cook for an additional 10-12 minutes, or until the pasta is al dente. If the soup becomes too thick, feel free to add more broth or water.
Taste the soup and adjust the seasoning with more salt and pepper if needed. Remove the bay leaf before serving.
Ladle the soup into bowls and garnish with fresh basil and a sprinkle of lemon zest, if desired.
