  • 4 medium sweet potatoes
  • 1 pound Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup shredded mozzarella cheese (optional)
  • Olive oil for drizzling
  • Red pepper flakes (optional)
  • Chopped fresh herbs (optional)
  • Avocado slices (optional)
  • Fresh parsley or basil for garnish
  • Parmesan cheese for garnish

  • Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Wash the sweet potatoes and pierce each one with a fork several times. This will prevent them from bursting in the oven.
  • Place the sweet potatoes on the prepared baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Bake for about 45 minutes or until tender.
  • While the sweet potatoes are baking, heat a skillet over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.
  • Add the chopped onion to the skillet and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute.
  • Add the chopped spinach and Italian seasoning to the sausage mixture. Cook until the spinach wilts, about 2 minutes. Season with salt and pepper to taste.
  • Once the sweet potatoes are cooked, remove them from the oven, and let them cool slightly. Cut a slit down the center of each potato and gently scoop out some of the flesh to make space for the filling.
  • Mix the scooped-out sweet potato flesh with the sausage mixture, and if desired, add in shredded mozzarella cheese. Fill the sweet potatoes with this mixture.
  • Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until everything is heated through and the cheese (if using) is melted.
  • Remove from the oven and allow to cool slightly. Top with fresh herbs and any additional garnishes before serving.
