4 medium sweet potatoes
1 pound Italian sausage
1 small onion, chopped
2 cloves garlic, minced
1 cup spinach, chopped
1 teaspoon Italian seasoning
Salt and pepper to taste
½ cup shredded mozzarella cheese (optional)
Olive oil for drizzling
Red pepper flakes (optional)
Chopped fresh herbs (optional)
Avocado slices (optional)
Fresh parsley or basil for garnish
Parmesan cheese for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash the sweet potatoes and pierce each one with a fork several times. This will prevent them from bursting in the oven.
Place the sweet potatoes on the prepared baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Bake for about 45 minutes or until tender.
While the sweet potatoes are baking, heat a skillet over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 7-10 minutes.
Add the chopped onion to the skillet and sauté until translucent, about 5 minutes. Stir in the garlic and cook for another minute.
Add the chopped spinach and Italian seasoning to the sausage mixture. Cook until the spinach wilts, about 2 minutes. Season with salt and pepper to taste.
Once the sweet potatoes are cooked, remove them from the oven, and let them cool slightly. Cut a slit down the center of each potato and gently scoop out some of the flesh to make space for the filling.
Mix the scooped-out sweet potato flesh with the sausage mixture, and if desired, add in shredded mozzarella cheese. Fill the sweet potatoes with this mixture.
Return the stuffed sweet potatoes to the oven and bake for an additional 10-15 minutes until everything is heated through and the cheese (if using) is melted.
Remove from the oven and allow to cool slightly. Top with fresh herbs and any additional garnishes before serving.
