  • 1/4 cup olive oil
  • 1/2 cup of your favorite jam (strawberry, raspberry, or cherry)
  • Optional: Fresh herbs (like rosemary or thyme)
  • Optional: Citrus zest (lemon or orange)
  • Optional: Powdered sugar for garnish
  • Optional: Coarse sea salt for garnish

  • Instructions

  • In a small bowl, combine the warm water and yeast. Allow it to sit for about 5-10 minutes until it becomes frothy.
  • In a large mixing bowl, whisk together the flour, sugar, and salt. Make a well in the center and pour in the frothy yeast mixture along with the olive oil. Stir until a shaggy dough forms.
  • On a floured surface, turn out your dough and knead it gently for about 5-7 minutes until it’s smooth and elastic.
  • Place your kneaded dough into a lightly greased bowl, cover with a towel, and let it rise in a warm spot for about 1-2 hours, or until it doubles in size.
  • Prepare an 11×17 inch baking pan by greasing it lightly with olive oil.
  • Gently punch down the risen dough and turn it out onto your prepared pan. Use your fingers to stretch it out to fit the pan.
  • Use your fingers to create little pockets all over the surface. Spoon the jam into those pockets.
  • Cover the pan with a towel again and let it rise for another 30-45 minutes.
  • Preheat your oven to 375°F (190°C) while the dough rises. Bake the focaccia for about 25-30 minutes until golden brown.
  • Let the focaccia cool for a few minutes, then sprinkle with powdered sugar or coarse salt for garnish.
