Ingredients
Scale
1 medium carrot (about 100g)
1 tablespoon fresh ginger
2 tablespoons apple cider vinegar
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon honey or maple syrup
1/2 cup neutral oil (like vegetable or canola)
Salt and pepper to taste
Instructions
Begin by peeling and chopping your carrot into small pieces.
Grate the ginger—don’t chop it too finely.
In a blender or food processor, combine the carrot pieces, grated ginger, apple cider vinegar, soy sauce, sesame oil, honey or maple syrup, and a pinch of salt and pepper. Blend until smooth and creamy.
Slowly drizzle in the neutral oil while the blender is running to emulsify the dressing.
Taste your creation and adjust the seasoning if needed.
Transfer the dressing to a jar or container, and it's ready to use.
Notes
A vibrant dressing made with carrots and ginger that elevates ordinary salads into a delicious culinary experience.
