2 pieces of pork cutlets (about 6 oz each)
Salt and pepper (to taste)
1 cup of all-purpose flour
1 large egg (beaten)
1 cup of panko breadcrumbs
Vegetable oil (for frying)
4 cups of cooked rice (white or brown)
1 cup of vegetables (like shredded cabbage, carrots, or snap peas)
Tonkatsu sauce (to taste)
Optional: pickled ginger or soft-boiled egg
Instructions
Prep the pork by patting the cutlets dry and seasoning with salt and pepper.
Set up an assembly line with flour, beaten egg, and panko breadcrumbs. Dredge each cutlet in flour, dip in egg, and coat with panko.
Heat vegetable oil in a frying pan over medium heat and fry the breaded cutlets for 4-5 minutes on each side until golden brown.
Prepare the rice according to package instructions while the katsu is frying.
Chop up the vegetables for assembly.
Once the katsu is done, drain on paper towels, slice, and assemble bowls with rice, veggies, katsu, and drizzle with tonkatsu sauce. Garnish as desired.
