Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are well-coated.
  • Press the crumb mixture firmly into a 9-inch tart pan, spreading it evenly across the bottom and up the sides. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool.
  • In a medium bowl, whisk together the key lime juice, sweetened condensed milk, egg yolks, and lime zest until well combined and smooth.
  • Pour the filling into the cooled graham cracker crust, spreading it evenly. Bake for an additional 15-18 minutes until the filling is set—but not browned. Remove and allow to cool to room temperature.
  • Refrigerate the tart for at least 3 hours, or until firm.
  • Once chilled, arrange the kiwi slices on top, adding fresh whipped cream if desired. Serve cold and enjoy!
