  • 3 large egg yolks
  • Zest of 2 key limes (optional)
  • Whipped cream (for serving)
  • Thin lime slices (for garnish)
  • Fresh mint leaves (for garnish)

  • Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  • Firmly press the crumb mixture into the bottom of a greased 9×9-inch baking pan. Bake for about 8-10 minutes until golden and fragrant. Let cool slightly.
  • In a bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth. Add in the zest if using.
  • Pour the filling over the cooled crust, spreading it evenly. Bake for another 15-20 minutes until the center is set.
  • Let the bars cool completely at room temperature, then refrigerate for at least 2 hours to help them set.
